Ingredients:

Preparation mode:
Prepare la masa de las crepes poniendo todos los ingredientes en la batidora y mezclando hasta que quede homogénea y sin grumos. Conviene hacerla con una hora de antelación, como mínimo, para que repose.
Prepare el relleno: pele las zanahorias y los puerros y corte ambos en tiritas finas como para juliana. Quite los hilos al apio y pique menudo. Lave los champiñones en agua fria con un chorrito de limón y luego píquelos menudos.
En una cacerola, ponga la mantequilla a derretir y, cuando empiece a deshacerse,
saltee en ella todas las verduras juntas. Tape la cacerola y deje que se hagan muy
suavemente. Retírese cuando estén hechas, pero aún crujientes. Salpimiéntelas
a su gusto y espolvorear con perejil y menta.
Prepare las crepes poniendo un chorrito de aceite en la sartén y dejando que se caliente mucho. Con un cazo, coja un poco de masa e incline la sartén para que la masa se reparta bien por el fondo. Cuando vea que está cuajada, déle la vuelta y deje que se haga por el otro lado.
Para tardar menos, puede ir haciendo las crepes con dos sartenes a la vez. Rellénelas con las verduras y colóquelas en una fuente de horno.
Prepare la salsa poniendo en un cazo al baño María, a fuego suave, la yema con el vino y el licor. Muévalo sin cesar con unas varillas y vaya añadiendo la mantequilla, poco a poco y sin dejar de remover.
Cuando esté bien incorporada, sazone a su gusto. Cubra con esta salsa las crepes y métalas bajo el grill un par de minutos. Sáquelas y sírvalas en seguida.
